Lemon Rice with Mint Raita

Lemon rice is a rice based dish popular in South India. It is prepared using cooked rice and mixing various tempered spices such as mustard, cumin, lentils, curry leaves, peanuts/cashews, onions, ginger, etc. It is often served with raita, curd mixed with herbs and dry spices. Today I have made a quick and easy homestyle version alongwith fresh mint raita. This recipe brings back nostalgia from the time I worked in Chennai and ate lemon rice every week. Hope you enjoy.

Tips before cooking:
  • Rice should not be overcooked
  • Add lemon juice in the end when rice is off the heat to prevent it from turning bitter
  • Peanuts can be replaced with cashews
  • Use fresh mint for raita
